Land and Soil

The Domaine Saint Just is situated in the village of Saint Just-sur-Dive, near Saint Cyr en Bourg. The soil from this region is characterised by sandstone, clay and limestone, lending a chalky quality.
When creating a new wine, having an acute knowledge of the land and climatology, are important factors in determining the stringent selection of a plot of land. The process of fermentation is usually considered even before the vines have been pruned. The specific type of land, soil and grape variety, combine in producing a wine characterized by its harmony, elegance and delicacy.
